From Fresh Ingredients to the Finished Jar: Making Our Ghanaian Shito

Code: NP-BLO-00005-1

Shito is one of Ghana’s most loved condiments. Its deep, savoury flavour and satisfying heat make it a delicious accompaniment to rice, yam, kenkey, banku, fried plantain, grilled meat, fish and many other meals.
Creating good Shito requires more than simply combining pepper and oil. The selection of ingredients, careful preparation, patient cooking and hygienic packaging all contribute to its flavour, texture and quality.

Selecting the Ingredients

The process begins with carefully selected ingredients. Peppers provide the heat, while onions, ginger and garlic help create the aromatic foundation of the sauce. Traditional dried seafood ingredients and spices contribute depth and the distinctive savoury character associated with Ghanaian Shito.

Each ingredient must be inspected, measured and prepared before cooking begins. Consistent preparation is especially important when producing multiple batches because customers expect the same enjoyable taste each time they open a jar.

Building the Flavour

The ingredients are blended and cooked carefully to develop their full flavour. This stage cannot be rushed. The mixture needs time for moisture to reduce and for the ingredients, spices and oil to combine into the rich, dark sauce people recognise as Shito.

Regular stirring helps the mixture cook evenly and prevents ingredients from settling or burning. Attention must also be given to the balance of pepper, seasoning and savoury ingredients so that the finished sauce is flavourful as well as spicy.

Filling and Packaging

Once the desired flavour and consistency have been achieved, the sauce is prepared for filling. Clean jars, lids, utensils and work surfaces are essential throughout the process. Careful filling and secure sealing help protect the product and make it ready for storage, sale and delivery.

The completed jars are then checked for a clean presentation before they reach customers.
